ZOOSH Sumac Salmon and Wedges

What you need

  • 2 potatoes, cut into wedge shapes
  • 2 small orange sweet potatoes, cut into wedge shapes
  •  Olive oil spray
  •  salt flakes
  • 4 x 150g approx. Atlantic salmon steaks with skin
  • 1 teaspoon sumac
  • 1/2 cup ZOOSH Zesty Zing Free Range Egg Lemon Aioli
  •  potato wedges, for serving
  •  salad, for serving


How to make it

PLACE potato and sweet potato wedges on a baking tray, spray with oil and sprinkle with salt. Bake in a hot oven 210°C for 40-50 minutes or until tender.
HEAT a non-stick frypan over a moderate heat. Sprinkle salmon with sumac and cook for 3-4 minutes on each side or until just cooked. Serve immediately with lemon aioli, wedges and salad.
