What you need
- 4 cobs corn
- 1 red onion, cut into wedges
- Olive oil spray
- 100 g rice stick noodles, prepared as per packet directions, cool
- 1 small barbequed chicken, cut into slices
- 4 spring onions, cut into 4cm lengths
- 1/2 bunch coriander, chopped
- 1/2 cup ZOOSH Tuk-tuk into Sth East Asian with a Hint of Kaffir Lime
How to make it
SPRAY the corn and onion with oil then barbeque or chargrill, turning for 4-5 minutes or until just tender. Cut kernels from corn cobs.
PLACE all the salad ingredients on a serving platter. Drizzle with dressing and gently toss to combine. Serve immediately.
