What you need

  • 1/2 chinese cabbage (wombok), trimmed and finely shredded
  • 2 carrots, cut into julienne strips
  • 1 red capsicum, cut into thin strips
  • 4 spring onions, sliced diagonally
  • 1/3 cup finely shredded mint
  • 1/3 cup chopped coriander
  • 1 red chilli, finely sliced
  • 1/2 cup ZOOSH Tuk-tuk into Sth East Asian with a Hint of Kaffir Lime
  • 1/4 cup salted and roasted peanuts, finely chopped, for garnish

How to make it

COMBINE vegetables, herbs and chilli in a bowl and drizzle with dressing. Gently toss to combine then sprinkle with peanuts. Serve immediately.
