What you need
- 2 cups small cauliflower pieces (1/2 cauliflower)
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- salt and freshly ground black pepper, to taste
- 1 cup barley, cooked as per packet directions, drained and cooled
- 1/4 cup toasted pistachio nuts, chopped
- 1/3 cup chopped mint
- 1/3 cup chopped parsley
- 1/2 cup ZOOSH Get Squeezed Lemon & Herb A Grain Salad’s Bestie
How to make it
PLACE the cauliflower on a baking tray and drizzle with oil, sprinkle with cumin and season. Toss to combine and then bake in a moderate oven 180°C for 30 minutes or until tender.
COMBINE all ingredients with the dressing and gently toss to combine. Serve immediately.
